Ariake Roasted Nori — 20 Half Sheets

The Ariake Sea, a shallow bay on the southwest coast of Kyushu, produces over half of Japan's total nori crop and is considered the finest nori-growing region in the country. The bay's unique conditions — tidal differences of up to 6 metres, fast-flowing currents, and an abundance of nutrient salts carried by rivers including the Chikugo — create an environment where nori absorbs nutrients more readily and develops a richer concentration of amino acids than seaweed grown elsewhere. The result is nori that releases its umami immediately on the tongue.

These half sheets are harvested from Ariake and then infrared roasted, a process that deepens the colour to a dark emerald-green, crisps the texture, and brings out toasty, savoury notes alongside the natural oceanic sweetness. The ingredient is simply dried nori seaweed — nothing else.

Half sheets are the practical size for everyday Japanese cooking: the right dimensions for wrapping onigiri, rolling temaki hand rolls, and cutting into strips for garnishing. They are also the format most commonly used in Japanese households.

Producer: Harvested and processed from the Ariake Sea, Japan.

Ingredients: Dried nori seaweed (Porphyra yezoensis)

Storage: Store in a cool, dry place away from moisture and direct sunlight. Reseal the packet tightly after opening — nori absorbs moisture from the air very quickly and will lose its crispness.

Net: 20 half sheets
