This is not an infused oil. Whole, fresh Spanish lemons are pressed together with premium extra virgin olive oil at the same time, within hours of harvest. The difference matters. Co-pressing captures the essential oils from the lemon peel, juice, and flesh directly into the olive oil during extraction, producing a flavour that is brighter, more natural, and more integrated than any post-production infusion can achieve. There are no additives, no flavourings, no artificial citrus notes — just the genuine, zesty essence of Mediterranean lemon bound into a smooth, well-balanced olive oil.

The result is an oil with real vibrancy. The lemon is immediate and clean on the nose, and the olive oil provides body and a gentle, peppery undertone that stops it from being one-dimensional. It is at its best used raw as a finishing oil: drizzle over grilled or pan-fried fish, seafood, steamed vegetables, or fresh salads.
