Buna-shimeji (Hypsizygus tessellatus) — brown beech mushrooms, sold as a fresh cluster of small, tightly packed stems topped with rounded brown caps. These are a staple of Japanese cooking and one of the most useful cultivated Asian mushrooms available. The flavour when raw is slightly bitter — they should always be cooked — but once heated they develop a nutty, earthy, mildly sweet character with a clean umami depth.
