PGM Balsamic Vinegar - 3 Crown

The 3 Crown is the middle of the Piazza Grande range and the point at which the vinegar begins to feel like something you drizzle rather than pour. The density rises to 1.25 — noticeably thicker and more viscous than the 1 Crown — and the flavour shifts from fresh and lively to smooth, rounded, and bittersweet. The colour is dark and glossy. The balance between sweetness and acidity is excellent — neither dominates, and the overall impression is of a well-integrated, concentrated vinegar with genuine depth.

It is made from a blend of cooked musts from Trebbiano, Lambrusco Grasparossa, and Ancellotta grapes — all typical local Italian varieties — with small additions of good wine vinegar. The must is fire-cooked in the traditional manner, then aged in small barrels of precious wood, where it gains concentration, colour, and complexity through slow evaporation and interaction with the wood. The 3 Crown sits in the sweet spot of the range: concentrated enough to work as a finishing vinegar for drizzling over dishes, but still fluid and acidic enough to use in dressings and marinades. It is the most versatile of the higher Crowns — equally at home in a vinaigrette as it is drizzled over Parmesan, grilled vegetables, or a piece of good steak.

Producer: Piazza Grande is a range from Mussini, one of Modena's leading balsamic producers. The Mussini family has been producing balsamic vinegar in Modena using traditional methods for generations, carefully balancing must and wine vinegar to create products with genuine organoleptic character at every level of the range.
