These are not standard chicken breasts. The slow-growth approach and corn-based diet produce flesh that holds its moisture better, has a subtle sweetness, and develops a noticeably richer flavour than fast-grown poultry. The skin — if you choose the skin-on option — crisps beautifully when pan-seared, turning a deep gold from the natural carotenoid pigments in the maize. Even skinless, these breasts cook with more body and less wateriness than standard alternatives.
The birds are produced by a cooperative of farmers in the Vendée region under the Leon family's Black Prestige brand. Each breast carries the Classe A certification, guaranteeing flawless presentation and optimal development.
