Plantin Black Truffle Paste

A concentrated black truffle paste from Plantin — 77% winter truffle content, made from a blend of brumale truffles (Tuber brumale) and Périgord black truffles (Tuber melanosporum) in extra virgin olive oil with brumale truffle juice. This is not a diluted sauce padded out with mushrooms — it is almost entirely truffle, bound with just enough oil to make it spreadable. A small jar goes a very long way.

The texture is dense and dark, with a deep, concentrated truffle flavour that is more intense than a truffle sauce and more versatile than a whole preserved truffle. Stir it through hot pasta with butter for an instant truffle dish. Fold it into mashed potato or risotto. Use it to make truffle butter by beating it into softened unsalted butter. Spread it thinly on crostini. Or use it alongside fresh summer or Burgundy truffles as a coating for pasta — the paste provides the base note and the fresh truffle provides the top.
